Million Dollar Dish – Crispy Skin Barramundi

Barramundi with green beans, thyme mash and beurre noisette – serves 4

 

Reeled in a whopper but don’t know what to do with it? Our mates at Wharf One at Darwin Waterfront gave us the inside word on their famed crispy skin barramundi.

 

INGREDIENTS:

4 x 180g saltwater barramundi fillets, skin on, scaled and deboned
1kg desire potatoes
200g unsalted butter cut into 1cm dice, plus extra for basting
200ml cream
2 tbsp salted baby capers
300g green beans, stalks removed
Juice of 2 lemons
50g chopped parsley
5 cloves garlic
20g thyme
Sea salt flakes
Black pepper
Olive oil for cooking

METHOD:

1. Bake potatoes at 180 degrees Celsius in a fan oven in their skins until very soft in the centre. While the potatoes are cooking, place the cream, thyme and garlic in a small pot and slowly bring to the boil. When it boils, remove from the heat and set aside. When the potatoes are cooked, cut them in half while still hot and scoop out the centre then mash the potato. Boil the cream and remove the theme, then add the cream to the potato then add 100g of the butter and beat with a rubber spatula or wooden spoon until smooth. Season with sea salt and black pepper. Keep hot while you cook the fish.

2. Boil a pot of salted water. Blanch the beans for 1-2 minutes and then remove them and place straight into ice water. This stops the cooking. Drain the beans and reserve for later.
3. Season the barramundi with sea salt and pepper. In a medium hot pan, place a good splash of olive oil then add the barramundi fillets skin side down and allow to colour. If the skin curls, gently press down on it until all the skin is in contact with the pan. When a golden brown colour is reached, turn down the heat to low and keep cooking for 4-7 minutes until the fish is changing colour to white on the sides of the fillet. Turn fish over. Add the beans and turn up the heat and add some diced butter and cook for a further minute. The butter should be foaming. If it isn’t, turn up the heat more but don’t burn it. Baste the skin of the fish with the foaming butter, remove the fish and beans from the pan and place on a paper towel to soak the excess butter.

4. For the beurre noisette, heat a pan to medium hot. Add 100g diced butter, allow to foam and turn brown. This doesn’t take very long so watch it and be careful not to burn it. When the butter is brown, carefully add the capers as it may spit hot butter out of the pan. Cook for 30 seconds then add the lemon juice, cook for 30 more seconds and add the parsley. Remove from the heat.

5. Place a dollop of thyme mash in the centre of your plate. Place some beans on the top, followed by the fish and drizzle over the beurre noisette. Enjoy!

First female fisho to hook a Season 6 red-tagged barra bags $10,000

Another lucky fisho has found themselves $10,000 richer as part of Million Dollar Fish Season 6!

Daly River local Kaitlyn Ahfat was fishing with a group of mates when she hooked onto the lucrative 63cm fish using live bait at the Daly River old crossing on Thursday, 15 October.

A mad keen fisho since she was a kid, the 25-year-old said she was relieved to have finally caught a red-tagged barramundi after registering for Million Dollar Fish each year since the competition started.

“I was out fishing with about 10 mates when I caught the red tag. Everyone was jumping up and down, we were so excited,” she said.

While the prize-tagged barramundi wasn’t the Million Dollar Fish, Ms Ahfat said the $10,000 would come in very handy purchasing furniture for her house, which is currently being renovated.

Thousands of dollars’ worth of prizes are also up for grabs just by registering for Million Dollar Fish Season 6, which runs until 31 March 2021.

Finniss River fish brings Season 6 tally to five!

Another Territorian is counting his lucky stars after reeling in a Season 6 red-tagged barramundi this week, earning him a whopping $10,000.

William Talbot, the fifth fisho to hook a prize-tagged fish this season, was wetting a line off the bank at the Finniss River mouth when he bagged the lucrative 70cm catch using live bait late on Monday, 5 October.

“When I first reeled the barra in, I didn’t realise it had a red tag. I took it up to the bank and it wasn’t until my girlfriend started screaming that I looked down and saw the tag,” he said.

“I’ve registered for Million Dollar Fish for the last few years but never thought I would be lucky enough to hook a red tag – I still don’t believe it.”

Tagged last month in Bynoe Harbour for Million Dollar Fish Season 6, the $10,000 barra travelled an incredible 64km to the Finniss River mouth before being caught.

Born and bred in the Top End, Mr Talbot has been living at Dundee Beach for over 20 years and said he couldn’t wait to splash the cash on some home renovations.

“I’m going to put the $10,000 towards building a new workshop and a verandah. My mate’s a builder so I’m going to get him to give me a hand,” he said.

Northern Territory Major Events Company CEO Tim Watsford congratulated local fisho William Talbot on reeling in the $10,000 catch.

“We are just over a week into Million Dollar Fish Season 6, and already we have seen five lucky fishos hook prize-tagged barra across the Top End,” he said.

“Season 6 is the biggest and best to date, and at this rate it’s shaping up to be the most memorable with more prize-tagged fish caught than ever before.”

Australia’s richest fishing comp is shaping up to be a record breaking bonanza with another red-tagged barra reeled in only days after the official launch of Season 6.

Mad-keen fisho Rowan Francis bagged the biggest catch of his life when he lured in a $10,000 barra, measuring 57cm in length, while fishing with his family at Yellow Water in Kakadu on Tuesday.

“My partner and the kids were asleep up the front of the boat and I was with my son when we hooked the fish. They thought we’d seen a croc when we started screaming,” he said.

“We fish Yellow Water a lot so it was awesome to reel in a $10,000 fish there. The barra was only 57cm but any size is good with a red tag.”

Mr Francis said he’d registered for Million Dollar Fish ever since it started back in 2015 but never thought he’d catch a red tag.

Now $10,000 richer, he plans to take his family of fishing fanatics on a bill fishing holiday.

This was the fourth Season 6 Fish caught since the comp opened on 1 October, bringing the tally to an all-time record high of four barra caught in six days with $45,000 in prize money given out to registered fishos from the Territory and around Australia.

There are still 97 $10,000 barra swimming around Territory waterways, along with four Double-Tagged Barra and seven barra worth a million bucks waiting to be caught.

Record breaking start to Season 6

It was a hat trick for eager fishos with three barra reeled in during the first few days of Season 6 of Million Dollar Fish.

With $35,000 in cash prizes going to three lucky fishos, it has been a ripper of a weekend of fishing in the Northern Territory.

Territorian Jamie Poniris was the first to hook a big one while on holidays at Kakadu National Park using a Territory Tourism voucher.

The 57.5cm, Season 6 red-tagged barra was caught at Yellow Water just hours after the comp was launched on 1 October, with his winnings going towards his brother’s upcoming bucks night later this month.

“I’ve been barra fishing for about 10 years and have registered for Million Dollar Fish each year since it started but I never thought I would be the one to reel in a red-tag,” said Jamie.

“I’ve got just about every colour and variety of fishing lure you can think of. I’d made one little modification to one in particular that I used out at Yellow Water which worked perfectly – one cast and that was it.

Jamie, who doesn’t like giving away fishing secrets, said he will be going back to Yellow Water to try his luck at catching the million dollar barra.

The second red-tagged barra was reeled in by Karama resident Wilfredo Riddick near the Nightcliff Jetty on Saturday, 3 October. Measuring 56cm in length, the $10,000 barra was released at the Nightcliff Boat Ramp just last week.

“I was fishing on the rocks near the Nightcliff Jetty – I couldn’t believe it when I saw the red tag. I’ll put the money to good use and upgrade my boat,” said Wilfredo.

“There were a few yahoos, that’s for sure. I went home and had a few celebratory beers over the weekend.

“I’ve always registered for Million Dollar Fish and get out fishing most weekends – I figured I would get hold of a red-tagged fish eventually.”

The third fish (the first Double Tag Barra of the season and a huge 98cm in length) was hooked on Sunday, 4 October, on the Mary River by ‘stoked’ Queenslander Ryan Curtis.

The Mackay resident, whose parents own Reidy’s Lures, used a Reidy’s custom vibe to reel in the lucrative prize earning him a whopping $10,000 and $5,000 to give to a mate who’s had a tough year.

“It was amazing catching the first Double Tag Barra,” recalled Ryan. “I was stoked with the size of the fish alone – when I saw the tags it just took it to a whole other level.

Ryan, who came up to visit the in-laws to do some fishing, said it was the first time he’d registered for Million Dollar Fish. “We thought we’d stay up here for a few extra weeks and have a go at it.

“I’ve been up here about five or six times fishing over the past 15 years – I just love it. I look forward to spending the cash on an electric motor to go and catch more barra.”
